This delicious Aargau Carro Cake is a light, moist, and fluffy Swiss specialty from the Aargau region. Featuring rich ground hazelnuts , freshly grated carrots, and airy whipped egg whites, it is finished with a bright lemon glaze and decorated with tiny marzipan carrots. - 275 g sugar
- 1 pinch of salt
- 6 egg whites
- 6 egg yolks
- 100 g butter
- 240 g ground hazelnuts
- 300 g finely grated carrots
- 1 tsp cinnamon
- 1 tsp baking powder from Dr. Oetker
- 200 g white flour
- 1 organic lemon
- 4 tbsp of Hero velvet apricots
- 50 g almond leaves
- 150 g icing sugar
- 2 tbsp lemon juice
- 8 marzipan carrots

Step 1: Base & Batter Prep
- Beat egg whites with ⅔ of the sugar and salt until foamy.
- Skim off 100g of the egg white mixture for the base.
- Mix that 100g with 40g hazelnuts, 2 pinches of cinnamon, and salt.
- Pour into a springform pan of approx. 24cm.
- Cream the butter with the remaining sugar and egg yolks until light and fluffy.
- Add 200g hazelnuts, carrots, and the remaining cinnamon.
- Stir in the orange juice and zest.
- Mix the baking powder with the flour.
- Fold it into the batter.
- Gently fold in the remaining egg whites.
Step 2: Baking
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Use conventional oven settings with top and bottom heat.
- Bake the egg white and hazelnut mixture for approximately 10 minutes.
- Remove from the pan and let cool.
- Pour the carrot cake mixture into a springform pan of approx. 24 cm.
- Bake for 45-50 minutes at 180 degrees.
- Let it cool down after baking.
Step 3: Assembly & Decoration
- Spread the base with 2 tablespoons of apricot jam.
- Place the carrot cake on top of the base.
- Spread the entire cake with approximately 2 tablespoons of apricot jam.
- Press almond flakes onto the edge.
- Mix icing sugar with lemon juice.
- Spread on top of the carrot cake.
- Place marzipan carrots on top.
