- 4 skinless, boneless chicken thighs, cut into bite-sized pieces
- 1 tsp soy sauce
- 2 tsp cornstarch
- 1 tbsp vegetable oil
- 1 medium onion, chopped
- 1 tbsp fresh ginger, grated

- 1 tbsp curry powder

- 400 ml (1½ cups) chicken stock
- 2 medium potatoes, peeled and cut into bite-sized cubes

- 150 g (1 cup) sugar snap peas

🍳 Step-by-Step Cooking Instructions
- Marinate the Chicken : In a medium bowl, whisk together the soy sauce and cornstarch. Add the bite-sized chicken pieces, toss well to coat evenly, and set aside to marinate while you prepare the remaining ingredients.
- Prep the Vegetables : Chop the onion, grate the ginger, mince the garlic, and peel and cube the potatoes so everything is ready to go.
- Sauté the Aromatics : Heat 1 tablespoon of vegetable oil in a deep frying pan or a wok over medium heat. Add the chopped onions and grated ginger, cooking for about 5 minutes until softened. Add the minced garlic and cook for just a few seconds until fragrant, being careful not to let it burn.
- Toast the Spices : Stir in the curry powder, ground turmeric, and Chinese five-spice powder. Mix briefly for about 30 seconds until the spices release their aroma.
- Sear the Chicken : Add the marinated chicken along with any remaining marinade to the pan. Stir-fry for a few minutes until the outside of the chicken is sealed and opaque, though it does not need to be cooked all the way through yet.
- Simmer the Potatoes : Pour in the chicken stock. Use a wooden spatula to scrape up any flavorful browned bits stuck to the bottom of the pan (deglazing). Add the cubed potatoes and bring the mixture to a boil. Reduce the heat to medium-low and let it simmer uncovered for 15 minutes, or until the potatoes begin to soften.
- Add the Greens & Finish : Stir in the sliced red pepper and sugar snap peas. Cook for an additional 5 minutes until the vegetables are tender-crisp and the chicken is fully cooked through. Taste the sauce and season with a pinch of salt if necessary.
- Serve : Ladle the hot curry over a bed of steamed white or brown rice. Garnish generously with fresh chopped cilantro and green onions, and serve with a side of crunchy prawn crackers.
