- 1 tbsp ghee, divided
- ¼ cup raisins
- 3 green cardamom pods
- 1 cinnamon stick
- 2 tbsp chopped almonds
- 2 tbsp chopped pistachios
- 1 cup vermicelli noodles
- 3 cups whole milk
- ½ tsp saffron threads
- 3 tbsp granulated sugar
- ⅛ tsp salt

- Toast the aromatics and nuts : Add ½ tbsp ghee to a medium pot over medium heat until melted. Stir in the raisins, cardamom pods, cinnamon stick, almonds, and pistachios. Sauté for 3–4 minutes until the almonds are lightly toasted and the raisins plump up. Remove the mixture from the pot and set it aside. Once cooled, discard the cinnamon stick and cardamom pods, leaving just the toasted nuts and raisins.
- Toast the vermicelli : Add the remaining ½ tbsp ghee to the same pot over low-medium heat. Add the vermicelli noodles and stir continuously for a few minutes until they turn a uniform golden-brown color. Remove the toasted vermicelli from the pot and set aside.
- Simmer the milk : Pour the whole milk into the pot and stir in the saffron threads. Heat over medium for 5–8 minutes, stirring occasionally, until the milk starts to steam and gently simmer.
- Cook the noodles : Add the toasted vermicelli back into the simmering milk. Cook for 4–5 minutes, stirring constantly to prevent clumping, until the noodles are fully tender.
- Sweeten and season : Lower the heat and stir in 2 tbsp of your reserved nut and raisin mixture, the sugar, and the salt. Stir well until the sugar dissolves completely.
- Garnish and serve : Ladle the warm pudding into bowls. Spoon the remaining toasted nuts and raisins over the top as a garnish and serve immediately
- Consistency Control : The vermicelli will continue to absorb milk and thicken the pudding substantially as it cools. If it becomes too thick for your preference, simply stir in a splash of warm milk before serving
- Crush the Noodles : If you are using long vermicelli strands, gently break them into 1- to 2-inch pieces with your hands before toasting so they are easier to stir and eat
- Serving Temperature : This dish is incredibly versatile and can be enjoyed warm straight from the stove or chilled in the refrigerator for a refreshing dessert.
