Meat Dolma

- Ground Meat : 1.1 lb / 500 g (half pork, half beef)
- Onion : 1 medium / 120 g (grated)
- Lemon Juice : 2 tbsp / 30 g
- Salt : 1.5 tsp / 7.5 g
- Tomato : 1 medium / 200 g (grated)
- Fresh Parsley : ½ bunch / 20 g (finely chopped)
- Short-Grain Rice : ½ cup / 100 g
- Black Pepper : To taste
- Olive Oil : ¼ cup / 50 g
- Grape Leaves : 1 jar (32 oz, about 100–120 leaves)
- Liquid : Chicken broth or water (enough to cover)
- Olive Oil : ¼ cup / 50 g
- 1 1/2 Tbsp unsalted butter (divided)
- Lemon Juice : 1 tbsp / 15 g

Instructions
Step 1: Prep the Leaves
- Jarred Leaves : Submerge in cold water and separate gently. Rinse multiple times to remove excess salt brine.
- Fresh Leaves : Blanch batches in boiling water for 5–30 seconds until pliable. Transfer immediately to cold water, then drain.
Step 2: Mix the Filling
- Combine ground meat, grated onion, salt, lemon juice, grated tomato, chopped parsley, rice, pepper, and olive oil in a large bowl.
- Mix thoroughly until well combined.
Step 3: Prepare the Pot
- Line the bottom of your cooking pot with torn or tough grape leaves.
Step 4: Roll the Dolmas
- Lay one leaf flat on your work surface, vein-side up.
- Place a spoonful of filling near the stem end.
- Fold the stem-end section over the filling, fold the sides inward, and roll tightly from stem to tip.
Step 5: Assemble and Simmer
- Pack the rolled dolmas tightly into the pot, seam-side down.
- Pour in the cooking olive oil and enough chicken broth or water to just cover the rolls.
- Place an inverted, heat-safe plate directly on top of the dolmas to weigh them down.
- Cover the pot with its lid and bring to a slow boil.
Step 6: Cook
- Reduce heat to a low simmer once boiling.
- Cook for 45–60 minutes until the rice and leaves are tender.
- Serve on a platter garnished with fresh lemon wedges.
Recipe Notes
- Onion Prep : Rubbing the grated onion with the salt and lemon juice tones down its sharp, raw flavor.
- No Pre-Cooking : You do not need to sauté the meat or onion before mixing the filling.
- Rolling Pressure : Use medium pressure when rolling. Leaving a little room allows the rice to expand without bursting the leaves.
- Efficiency Tip : Speed up the process by laying out a batch of leaves all at once, portioning the filling, and rolling them in sequence.
- Burn Prevention : Lining the bottom of the pot with extra leaves keeps your dolmas from sticking or scorching.
- Moisture Control : Check the pot occasionally during simmering. Add a splash of hot water if the liquid drops too low.
