🍳 Step-by-Step Cooking Instructions

  1. Whisk yolks and sugar in a double boiler until blended.
  2. Stir in liqueur , water, juice, and zest..
  3. Cook over low heat , stirring constantly but gently.
  4. Do not boil the mixture.
  5. Check thermometer to ensure it reads 160°F.
  6. Ensure custard coats the back of a metal spoon.
  7. Transfer immediately to a clean bowl.
  8. Cool in an ice bath for a few minutes.
  9. Bring completely to room temperature
  10. Beat heavy cream in a separate large bowl until thickening.
  11. Add confectioners' sugar to the cream.
  12. Whip cream until stiff peaks form.
  13. Gently fold the whipped cream into cooled custard.
  14. Divide evenly into eight 4-oz. ramekins.
  15. Smooth the tops with a spatula
  16. Freeze until firm for 4 hours or overnight.
