🍳 Step-by-Step Cooking Instructions
- Prep the oven: Preheat your oven to 375°F.
- Prep the pan: Line a large rimmed baking sheet with parchment paper and grease it lightly with cooking spray.
- Roll the pastry: Dust your work surface with flour. Roll the puff pastry into a 12-by-16-inch rectangle.
- Layer the fillings: Spread the Dijon mustard evenly to the edges. Layer the ham across the pastry, then sprinkle the Gruyère cheese on top. Season with black pepper.
- Roll and slice: Start at one short end and tightly roll the pastry into a log. Trim and discard the uneven ends. Cut the log into 20 slices (about 1/2-inch thick each).
- Chill: Place the slices onto your prepared baking sheet. Freeze for 5 minutes to firm up the pastry.
- Bake: Bake for 20 to 25 minutes until the pinwheels are golden brown and puffed.
- Serve: Garnish with fresh chives. Serve warm or at room temperature
📝 Recipe Notes & Pro Tips
- Pro Chilling Tip: Do not skip the 5-minute freeze. Chilling solidifies the butter in the puff pastry, which creates maximum flaky layers when it hits the hot oven.
- Make-Ahead: You can roll and slice the log the night before. Keep the sliced wheels covered in the fridge, then bake them fresh in the morning.
- Substitutions: Swap Gruyère for Swiss or Cheddar cheese if preferred. Honey mustard can also replace Dijon for a sweeter flavor profile
