- Phyllo dough : 4 sheets, thawed.
- Unsalted butter : 4 tbsp, melted.
- Raw pistachios : 1/2 cup, finely ground.
- Granulated sugar : 3 tbsp.
- Kaymak : 4 tbsp (Turkish clotted cream)

Assemble the Base
- Place two sheets of phyllo on your work surface.
- Lightly brush the entire surface with melted butter.
- Sprinkle 2 tablespoons of ground pistachios over the center.
- Leave the edges clear.
- Evenly sprinkle 1 tablespoon of sugar over the nuts.
- Dot the surface with 2 tablespoons of kaymak.
Fold the Envelope
7. Fold 1/3 of the phyllo sheet toward the center.
8. Lightly brush the unbuttered side with melted butter.
9. Fold the opposite side over to form a rectangle.

11. Lightly butter a large non-stick skillet over medium heat.
12. Place the envelope seam-side down in the skillet.
13. Brush the top surface with melted butter.
14. Cook for 2 minutes until golden brown and crisp.
15. Carefully flip the pastry over.
16. Cook for 1 to 2 minutes more until flaky.
17. Repeat the process for the second envelope.Serve
