- 6 to 7 cups chicken or vegetable broth
- 3 tbsp unsalted butter
- ½ small onion, finely chopped
- 3 garlic cloves, minced
- 12 oz button mushrooms, sliced
- 4 oz gourmet medley or wild mushrooms, sliced
- 2 tsp fresh thyme leaves
- 1 cup Arborio rice
- ½ cup dry white wine
- ½ tsp kosher salt
- ¼ tsp ground black pepper
- 5 oz baby kale (1 package)
- ½ cup grated Parmesan cheese (plus extra for garnish)

- Warm the Broth : Heat the broth in a medium saucepot over medium heat. Bring to a simmer, turn off the heat, and keep it covered.
- Sauté Aromatics & Mushrooms : Melt the butter in a large, high-sided skillet over medium-high heat. Cook the onion for 2 minutes, stirring frequently. Add the garlic and stir constantly for 30 seconds. Toss in all the mushrooms and thyme, cooking for 8 to 10 minutes until deep golden brown.
- Toast the Rice : Lower the heat to medium. Stir in the Arborio rice and cook for 1 to 2 minutes until the edges of the grains look translucent.
- Deglaze : Pour in the white wine, salt, and pepper. Stir constantly until the wine is mostly absorbed by the rice.
- Simmer and Stir : Add the hot broth ½ cup at a time. Stir frequently and let the liquid absorb before adding the next splash. Maintain this rhythm for 18 minutes.
- Finish and Wilt : Stir in the baby kale and Parmesan cheese. Cook for an additional 2 to 3 minutes until the rice is perfectly tender and the kale wilts. Add a bit more broth if it looks too thick.
- Serve : Divide the risotto among warm plates, top with extra cheese, and serve immediately.

- Broth Management : You may not need all 7 cups of broth. One cup of Arborio rice typically absorbs about 3.5 to 4.5 cups of liquid, but the extra amount ensures you never run out mid-cook. Always keep the broth warm; adding cold broth drops the cooking temperature and ruins the creamy starch release.
- Wine Selection : Use a crisp, dry white wine like Pinot Grigio, Sauvignon Blanc, or Sauvignon. Avoid sweet wines, which will ruin the savory profile. If cooking without alcohol, swap the wine for an equal amount of broth mixed with a teaspoon of lemon juice.
- The "Gourmet" Mushroom Mix : For the 4 ounces of medley mushrooms, look for shiitake, oyster, or cremini mushrooms to add depth and texturual contrast against the standard button mushrooms.
