Rainbow Roll Sushi

- ½ sheet nori (seaweed sheet)
- ¾ cup cooked sushi rice (seasoned with sushi vinegar)
- 1 imitation crab stick, sliced thin
- 2 pieces cucumber, sliced into thin strips
- ½ avocado (divided: some for filling, remaining sliced thin for topping)
- 3 slices sushi-grade salmon
- 3 slices sushi-grade tuna
- 1 mango, thinly sliced

- Prep the mat : Cover your bamboo sushi mat completely in plastic wrap to prevent the rice from sticking to the wood.
- Layer the rice : Place the half sheet of nori rough-side-up on the mat. Spread the cooked sushi rice evenly across the entire surface of the nori. Flip the sheet over so the rice is now face-down on the plastic wrap.
- Add the filling : Cut half of the avocado into thin strips. Place the avocado strips, imitation crab slices, and cucumber strips lengthwise down the center of the bare nori sheet.
- Roll the sushi : Place your thumbs under the mat. Lift the edge closest to you up and over the filling. Tuck the edge tightly, then continue rolling forward until you form a complete log. Give it a gentle squeeze through the mat to secure the shape.
- Arranging the rainbow : Slice the remaining avocado into paper-thin pieces. Lay the slices of tuna, salmon, mango, and avocado over the top of the roll. Overlap the edges slightly, alternating colors in a pattern (e.g., tuna, salmon, mango, avocado).
- Form the toppings : Place a fresh piece of plastic wrap tightly over the decorated roll. Place the sushi mat back over it and gently squeeze the roll along its length to mold the fish and fruit firmly onto the rice.
- Slice and serve : Leave the plastic wrap on the roll to keep the toppings intact while cutting. Wet the blade of a sharp knife with water. Cut the roll into 8 equal pieces. Peel away the plastic wrap from the individual pieces, plate up, and serve.
- Clean Cutting : Dip your knife blade in water or a water-vinegar mix before every single cut. Wipe the blade clean between slices. This prevents the starch from the rice and the delicate fish toppings from sticking and tearing.
- Sushi Rice Tip : Always use short-grain Japanese sushi rice. For the best flavor and stickiness, season the warm cooked rice with a mixture of rice vinegar, sugar, and salt before letting it cool to room temperature.
- Ingredient Substitutes : If you cannot find high-quality raw sushi-grade fish, you can easily substitute the toppings with cooked shrimp (ebi), smoked salmon, or double up on mango and avocado for a fruit-forward variation.
