- 2 large eggplants, cut into 1-inch cubes
- 5 to 6 zucchini squash, sliced into 1/2-inch thick rounds
- 4 large onions, thinly sliced into rings
- 6 large tomatoes, peeled, seeded, and coarsely chopped
- 6 garlic cloves, finely minced
- 2 red bell peppers
- 2 green bell peppers
- 2 yellow or orange bell peppers
- 1/2 cup extra virgin olive oil (plus extra for drizzling)
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh basil, chiffonade/sliced
- 1 teaspoon dried thyme
- 1 whole bay leaf
- To taste coarse salt and freshly ground black pepper
- 6 small eggs (or quail eggs)
- 1 tablespoon white vinegar (for poaching water)
- For topping fresh basil leaves and oil-cured black olives
- For serving 1 crusty French baguette

Instructions
1. Prep and Sauté the Eggplant and Zucchini
- Put the cubed eggplant and sliced zucchini into separate colanders.
- Sprinkle generously with coarse salt; let sit for 30 minutes to draw out excess moisture.
- Rinse the vegetables thoroughly under cold water to remove the salt.
- Pat them completely dry using paper towels or a clean kitchen cloth.
- Heat 3 tablespoons of olive oil in a large Dutch oven over medium-high heat.
- Sauté the eggplant batches until lightly golden, then remove and set aside.
- Add more oil to the pan and sauté the zucchini until tender; remove and set aside.
2. Char and Slice the Peppers
- Place the whole bell peppers directly over a gas flame or under a broiler.
- Turn them occasionally until the skins are completely blackened and charred.
- Transfer hot peppers to a bowl and cover tightly with plastic wrap for 10 minutes to steam.
- Peel away the blackened skins using your fingers; do not rinse under water.
- Slice open, discard the seeds and stems, and cut the flesh into thin strips.
3. Build the Stew Base
- Lower the heat to medium and add the remaining olive oil to the same Dutch oven.
- Cook the sliced onions with a pinch of salt until soft and translucent..
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Toss in the prepared chopped tomatoes, parsley, basil, thyme, and the bay leaf.
- Simmer the tomato mixture for 10 minutes until it begins to break down into a sauce.
4. Simmer to Perfection
- Fold the sautéed eggplant, zucchini, and charred pepper strips into the tomato base.
- Bring the mixture to a gentle boil, then turn the heat down to low.
- Simmer uncovered for 45 to 60 minutes, stirring occasionally, until the liquid reduces and thickens.
- Remove the bay leaf and adjust the final seasoning with salt and pepper.
5. Poach the Eggs
- Bring a wide skillet of water to a gentle simmer and stir in the white vinegar..
- Crack each egg into a small ramekin first.
- Swirl the simmering water to create a whirlpool and gently slip each egg into the center.
- Poach for exactly 4 minutes until the whites are set but yolks stay soft.
- Remove with a slotted spoon and drain on paper towels; keep warm.
6. Garnish and Serve

Ladle the hot ratatouille into wide serving bowls.
- Top each portion with a poached egg if desired.
- Garnish the top with fresh basil leaves, black olives, and a drizzle of olive oil.
- Serve immediately alongside warm, sliced French bread.
Recipe Notes
- Moisture Control: Salting the eggplant and zucchini prevents them from acting like sponges. It ensures they brown nicely rather than turning soggy during the initial sauté step.
