- 3 tbsp avocado oil (high smoke point)
- 1 medium skin-on eggplant, cut into 1” pieces
- 3 tbsp olive oil
- 1 medium white onion, peeled and julienned
- 2 ribs celery, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 cup green olives, sliced
- 2 tbsp capers
- 2/3 cup white wine vinegar
- 2 tbsp sugar
- 1 cup crushed tomatoes
- 2 heaping tbsp tomato paste
- 1 cup cherry tomatoes, sliced in half
- 2 tbsp fresh basil, chopped
- To taste sea salt and black pepper

🍳 Step-by-Step Cooking Instructions
1. Sear the Eggplant
- Heat avocado oil in a large rondeau or sauté pan over high heat until it just begins to smoke.
- Carefully drop in the cubed eggplant .
- Sauté quickly for 1 to 2 minutes until beautifully browned on the outside but still firm inside.
- Remove the eggplant immediately and let it drain on a plate lined with paper towels.
2. Cook the Aromatics
- Wipe out any residue if necessary, add the olive oil , and reduce the heat to medium.
- Toss in the julienned onions and sliced celery .
- Sauté for 8 to 10 minutes , stirring occasionally, until they are soft and lightly caramelized..
- Add the sliced garlic and cook for just 30 to 45 seconds until highly fragrant (do not let it burn)..
3. Build the Agrodolce Blend
- Add the olives, capers, white wine vinegar, and sugar directly into the pan, stirring well to combine.
- Let the vinegar mixture simmer and reduce for 3 to 4 minutes to deglaze the pan and dissolve the sugar.
- Pour in the crushed tomatoes and stir in the tomato paste .
- Drop the heat to low-medium and let the mixture simmer gently until it noticeably thickens into a rich sauce.
4. Finish and Serve
- Fold the seared eggplant, halved cherry tomatoes, and fresh basil into the thickened sauce.
- Season generously with sea salt and pepper to taste.
- Remove from heat and serve immediately, transfer to jars for canning, or cool and store in the refrigerator.
📝 Recipe Notes & Pro Tips
- The Agrodolce Balance : Caponata relies heavily on an "agrodolce" (sweet and sour) flavor profile. If your vinegar is very sharp, you can adjust the balance at the end by adding a pinch more sugar.
- Why Avocado Oil? Using a high-smoke-point oil like avocado oil allows you to brown the eggplant fast at high temperatures. This prevents it from absorbing too much oil and getting soggy.
- Better the Next Day : Caponata tastes significantly better after the flavors have spent time marrying together. Try making it 24 hours before you plan to serve it.
- Serving Suggestions : Serve it at room temperature or slightly warm over toasted crusty bread (crostini), alongside grilled meats, or as a component of an antipasto platter.
