This Velvety - Turkish Cacık a refreshing cold yogurt dish made with plain yogurt, chopped or grated cucumbers, crushed garlic, salt, and dried or fresh mint . Instructions

  1. Prep the cucumbers : Finely dice the cucumbers if you prefer a traditional crunch, or grate them. If you choose to grate them, gently squeeze out the excess moisture using your hands or a clean kitchen towel to prevent the soup from becoming watery.
  2. Mash the garlic : Mince the garlic cloves, then mash them into a paste on your cutting board using the flat side of a knife and a pinch of salt.
  3. Whisk the base : Whisk the whole-milk yogurt in a large bowl until it is completely smooth. Slowly drizzle in the ice-cold water while whisking until you achieve a creamy, slightly runny consistency
  4. Combine ingredients : Gently fold the prepped cucumbers, mashed garlic paste, ½ tsp salt, and dried mint into the yogurt base until the mixture is evenly distributed.
  5. Chill and infuse : Cover the bowl and place it in the refrigerator for at least 30 minutes. This resting time is crucial for the garlic and mint flavors to fully infuse into the yogurt.
  6. Garnish and serve : Pour the chilled soup into individual small bowls. Drizzle the top with extra virgin olive oil and scatter the fresh herbs and a pinch of extra dried mint over the surface just before serving.

    Recipe Notes

  1. Texture Control : Adjust the water amount based on your preference. Use closer to ¼ cup if you want a thick dip similar to tzatziki, or up to ½ cup for a traditional, drinkable soup consistency.
  2. The Herb Secret : Dried mint is the defining herb for authentic Turkish cacık. Do not skip it, as it provides a distinct, concentrated flavor that fresh mint alone cannot replicate.
  3. Yogurt Selection : Whole-milk plain European-style or traditional Turkish yogurt works best. Avoid thick Greek yogurt unless you plan to add significantly more water to thin it out.
  4. Garlic Intensity : The raw garlic flavor will grow stronger and sharper the longer the dish sits in the fridge. If you are sensitive to raw garlic, use only one clove or remove the inner green germ before mashing.
