- Whole chicken : 1 (about 5 pounds ), cut into 10 pieces.
- Kosher salt : 5 teaspoons Diamond Crystal (or 2.5 teaspoons table salt).
- Tomato paste : 1 can (6 ounces )
- Garlic : 5 medium cloves
- Dried árbol chiles : 5 (5 g), stems removed
- Whole cloves : 3
- Chicken bouillon powder : 1 tablespoon
- Whole black peppercorns : 2 teaspoons
- Sweet paprika : 2 teaspoons
- Ground coriander : 2 teaspoons.
- Ground cumin : 1 teaspoon
- Dried marjoram : 1 teaspoon
- Dried thyme : 1 teaspoon
- Chicken stock : 1 quart (960 ml)
- Olive oil : 2 tablespoons (30 ml).
- White onion : 1 small (6 ounces ; 170 g), diced into 1/4-inch pieces.
- Plum or Roma tomatoes : 3 (about 12 ounces; 340 g), diced into 1/4-inch pieces.
- Kosher salt : 1 teaspoon Diamond Crystal, plus more to taste.
- Russet potatoes : 2 (about 20 ounces; 580 g total), peeled and cut into 1-inch pieces.
- Carrots : 4 (about 10 ounces; 280 g total), peeled and cut into 2-inch pieces.

🍳 Step-by-Step Cooking Instructions
- Sprinkle chicken pieces evenly with 5 teaspoons kosher salt.
- Place on a large plate.
- Refrigerate uncovered.
- Chill for at least 30 minutes (up to 24 hours).
- Combine tomato paste, garlic, chiles, cloves, bouillon, peppercorns, paprika, coriander, cumin, marjoram, thyme, and chicken stock in a blender.
- Blend until completely smooth.
- Scrape down sides as needed.
- Blend for about 1 minute , then set aside.
- Heat olive oil in a large stock pot or Dutch oven over medium heat .
- Add half of the chicken pieces skin-side down in a single layer.
- Cook undisturbed until the skin is light golden (about 6 minutes ).
- Transfer seared chicken to a plate.
- Repeat with the remaining chicken pieces.
- Keep the rendered fat in the pot.
- Add onion, tomatoes, and 1 teaspoon salt to the empty pot.
- Stir to coat the vegetables in the chicken fat.
- Cook and stir frequently until onions soften (about 2 minutes ).
- Add the remaining chicken carcass bones (if using) and the seared chicken back to the pot.
- Pour the blended sauce over the top.
- Use tongs to flip and completely submerge the meat.
- Bring to a simmer over medium heat, then reduce heat to low .
- Simmer for about 30 minutes .
- Remove white meat when it hits 160°F (71°C).
- Remove dark meat when it hits 175°F–185°F (79°C–85°C).
- Transfer cooked chicken to a clean bowl and cover.
- Bring the remaining sauce to a boil over high heat .
- Reduce to medium-high to keep a steady simmer.
- Stir in the potatoes and carrots.
- Cook occasionally until vegetables are fork-tender and sauce is velvety (12 to 18 minutes ).
- Return the chicken to the pot.
- Simmer briefly until coated and heated through.
- Season with extra salt to taste.
- Garnish with cilantro and serve with crusty bread.
