- 2 cups (400g) granulated sugar
- 2 cups (470ml) water
- 1 tbsp (15ml) fresh lemon juice
- 1 lb (454g) Kadayıf (shredded phyllo dough)
- 1 cup (227g) unsalted butter, melted
- 10 oz (283g) unsalted, stringy Turkish cheese (or low-moisture Mozzarella)
- 4 tbsp (60g) unsalted butter, softened
- 1 tbsp (15ml) grape molasses (pekmez)
- Garnish: Finely ground pistachios

Phase 1: Make the Syrup
- Boil & Thicken: Boil sugar and water, then simmer for 10 minutes.
- Cool: Stir in lemon juice and let the syrup cool completely.
Phase 2: Prep & Assemble
- Prep Pan: Mix softened butter with grape molasses and grease your pan(s) with half the mixture.
- Prep Pastry: Chop shredded Kadayıf and toss thoroughly with melted butter.
- Layer: Press half the pastry into the pan, cover with cheese (leaving a border), and top with the remaining pastry, pressing firmly.
Phase 3: Cook & Serve
- Cook: Cook on medium-low heat until the bottom is golden.
- Flip: Grease the pan with the remaining molasses-butter, flip the pastry, and cook the other side.
- Finish: Pour cool syrup over the hot pastry, garnish with pistachios, and serve.

- The Ultimate Temperature Rule: Your syrup must be completely at room temperature (or cool) and the Künefe must be sizzling hot straight off the stove. If you pour hot syrup over hot pastry, it will ruin the texture and turn it completely mushy.
- Pressing is Key: When building your bottom and top pastry layers, use the bottom of a heavy glass or a smaller flat pan to firmly compress the shredded phyllo. Packing it tight prevents the dough from falling apart when you flip it and keeps the melting cheese safely inside.
- Moisture Control for Cheese: If you are using fresh Mozzarella as a substitute, slice or shred it ahead of time, place it on paper towels, and press out any excess water .
