Prep the Dressing: Whisk together the sherry vinegar, olive oil, salt, and black pepper in a small bowl until combined.

Load the Blender: Add 4.5 cups of the watermelon, half of the diced cucumber, half of the chopped red bell pepper, 2 of the Roma tomatoes, and all of the diced red onion to your blender.

Blend Until Smooth: Start blending the vegetables on low, gradually raising the speed. While the blender is running, slowly stream in your whisked vinegar and oil mixture until the broth is completely smooth.

Mix the Soup: Pour the smooth gazpacho broth into a large container or serving bowl. Stir in the remaining 4.5 cups of diced watermelon, the rest of the diced cucumber and bell pepper, the final diced Roma tomato, the small-diced jalapeño, and the minced fresh herbs.
